Baking with Fresh Blueberries

 

blueberries, bakingOne of our favorite summer activities as a family is blueberry picking. Read more about our blueberry picking adventures here. Even more wonderful is eating all of the yummy berries at home! While I kept some fresh in the refrigerator for snacking, putting in cereal and oatmeal, or making blueberry pancakes, I also froze a few bags for later, I then did some simple baking for a little variety. These two recipes were super quick and easy!

 

Homemade Blueberry Sauce:

This is literally just a few ingredients and doesn’t take any time at all. Cornstarch and water, blueberries, brown sugar, lemon juice, and I added a little bit of cinnamon for added yumminess. (I add cinnamon to everything I can!) You can reduce the amount of brown sugar if you don’t want it too sweet. I found this amount to be fine. Heat and simmer over low heat. I let mine simmer a little longer to make it thicker and saucier. I then transferred it to a ball jar and let it cool on the counter before putting it in the fridge. Its super yummy on pancakes, oatmeal, toast, or just by the spoon full.

Homemade Blueberry Crisp:

Another super easy recipe was this blueberry crisp that we topped with vanilla ice cream. My son prefers to eat it without ice cream (bizarre I know). Its very good either way. The blueberry base is just blueberries added to sugar and cornstarch. The crisp topping is oatmeal, sugar, flour, and cold butter. (I used Steel Cut Oats for the first time in my crisp and it was great.) Also, I usually reduce the amount of sugar I put in as the fruit is usually sweet enough.

 

                                          

 

Blueberries are so good for you! They are full of antioxidants and vitamins and a benefit to your health and wellness. They are also very versatile. Eat them fresh, frozen, as a cereal topping, in pancakes, in baked goods, or as a yummy sauce. However you do it remember you are taking care of yourself buy eating fresh whole foods.
